Géo Balme, a passionate truffle farmer in L'Isle-sur-la-Sorgue, welcomes us to his estate for an immersion into the fascinating world of the black truffle of Provence.
L'Isle-sur-la-Sorgue, famous for its antique dealers and colorful markets, also conceals a culinary treasure cultivated with passion and expertise: “the black diamond”.
His father passed down his love for truffles. At 12, he found his first truffle “by the fly” and has never been able to stop since… Thus, truffles became a passion and then a chosen profession! Since then, Géo Balme, an authentic and endearing character, has devoted his life to understanding and hunting truffles. He feels at peace only surrounded by nature. It is in his lands that Géo thrives. For 17 years now, Géo has shared his life with Laurence, an essential link in the story as she shines at various Provençal markets (see details below).

In the world of truffle farming, truffle dogs play a vital role. These canine companions, specially trained, have an exceptionally developed sense of smell, essential for locating truffles buried underground. The collaboration between the dog and the truffle farmer reinforces a unique bond, reflecting harmony between man and nature. Géo and Laurence have 4 dogs, who have known truffles since the age of 2 months! Upon arrival at the truffle field, “Copine,” one of Géo’s dogs, rushes under an oak tree and digs up a first truffle! Then two, then three…

Truffle farming is a delicate art, governed by the seasons and climate. Géo Balme guides us through the stages of a truffle's life, from selecting truffle oaks to the exciting harvest, aided by his loyal truffle dogs. To have good winter truffles, rain in summer is imperative. However, due to climate change, summer rains are becoming increasingly rare… Thus, fewer and fewer truffles hide under the garrigues (yielding lower and more unpredictable returns).
The best months to enjoy winter truffles are January and February, and for summer white truffles, June, July, and August. The truffle offers a range of flavors and aromas… But for Géo, there's no hesitation—the best (and simplest!) way to eat truffles is to lock the truffles with eggs from his hens and wait 1 or 2 days. The intense aromatic power of the truffle permeates the shells, creating naturally truffled eggs! His secret? Grate a few slices of fresh truffles over fried eggs… A delight!
