Clément Martin trained in pastry, chocolate, confectionery and ice cream with the best, first joining the Compagnons du Devoir and the Tour de France before continuing his apprenticeship with Frédéric Hawecker, Meilleur Ouvrier de France Chocolatier, in Châteaurenard.
